Chocolate Potato Cake

Ingredients
  

  • 1 cup butter softened
  • 2 cups sugar
  • 2 cups flour
  • 4 eggs
  • 1 cup mashed potatoes
  • ½ cup milk
  • 1 cup cocoa powder
  • 1 cup chopped nuts
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 1 tsp allspice

Instructions
 

  • Preheat oven to 350°. Cream butter and sugar together in a large bowl.
  • Mix in the egg yolks and mashed potatoes.
  • Next, add the milk, cocoa, flour, baking powder, and spices. Mix till combined.
  • In a separate bowl, beat egg whites until soft peaks form. Fold into the cake batter, then add the nuts.
  • Bake for about 1 hour or until a toothpick inserted into the center comes out clean.
